This week's strategy: Three meat nights, three veg nights, placed where they make sense — Tuesday goes soft for Amanda's dental work, Thursday's chicken parm lands when James is at the table (with a real eggplant parm for Amelia off the same breading station), and Saturday's tacos run almost entirely on Friday's leftover tortillas, cheese, and toppings. Still zero bell peppers.

Garlic-Butter Chicken Thighs with Rice & Green Beans

Boneless thighs seared hard, then a garlic butter pan sauce spooned over everything. The green beans steam right in the same pan at the end.

Ingredients · Serves 4

  • 1.5 lbs boneless skinless chicken thighs
  • ¾ lb green beans, trimmed
  • 3 tbsp butter
  • 5 garlic cloves, minced
  • 1 lemon
  • Rice ✓ pantry
  • 1 tbsp olive oil ✓ pantry
  • 1 tsp smoked paprika ✓ pantry
  • 1 tsp garlic powder ✓ pantry
  • Salt and black pepper ✓ pantry

Steps

  1. Start the rice first.
  2. Pat thighs dry. Season both sides with salt, pepper, paprika, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high. Sear thighs 5–6 min per side until deeply golden and cooked through (165°F). Work in batches if needed. Remove to a plate.
  4. Drop heat to medium-low. Add butter and minced garlic to the pan. Cook 1 min, scraping up the browned bits — that's the sauce.
  5. Add green beans and a splash of water. Cover 4–5 min until tender-crisp.
  6. Return chicken to the pan, spoon the garlic butter over everything, finish with a squeeze of lemon. Serve over rice.
Matt: Chicken cut small, soft green beans, rice — easy night for him. Your plate: One thigh, heavy on the green beans and moderate rice. Leftover thighs: Slice cold over a lunch salad.

Mushroom Risotto

Twenty-five minutes of gentle stirring — put on some music. The constant stirring releases the rice's starch, which is the entire secret. No cream needed; the creaminess is technique.

Ingredients · Serves 4

  • 1½ cups arborio rice
  • 1 lb cremini or button mushrooms, sliced
  • 6 cups vegetable broth
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • ½ cup dry white wine (optional — broth works)
  • ½ cup grated Parmesan, plus more to serve
  • 3 tbsp butter, divided
  • 2 tbsp olive oil ✓ pantry
  • 1 tsp dried thyme ✓ pantry
  • Salt and black pepper ✓ pantry

Steps

  1. Warm the broth in a saucepan on low and keep it there — cold broth shocks the rice and slows everything down.
  2. In a wide, heavy pan, heat olive oil and 1 tbsp butter over medium-high. Cook mushrooms without crowding until deeply browned, 7–8 min. Season, add thyme, remove and set aside.
  3. Same pan, medium heat, 1 tbsp butter. Cook onion 4 min until translucent. Add garlic, 1 min.
  4. Add the arborio rice dry. Stir 2 min until the edges turn translucent — toasting the rice matters.
  5. Add wine if using; stir until absorbed. Then add warm broth one ladle at a time, stirring gently and often, letting each ladle mostly absorb before the next. This takes 20–25 min. The rice is done when tender with the faintest bite.
  6. Off heat: stir in the last tbsp of butter, the Parmesan, and the mushrooms (save a few for topping). It should be loose enough to slowly spread on the plate — add a final splash of broth if it's stiff.
  7. Serve immediately with extra Parmesan and black pepper.
For Amanda's mouth: Everything here is soft — if she's still numb at dinner time, it even reheats gently with a splash of broth for a later sitting. Matt: Risotto is elite toddler food. The stir: You don't have to stir literally constantly — often is enough. Pour yourself something and enjoy the process.

Crispy Sheet Pan Gnocchi with Cherry Tomatoes & Mozzarella

The trick that feels illegal: shelf-stable gnocchi goes on the pan dry, straight from the package. Ten minutes of prep, the oven does everything else.

Ingredients · Serves 4

  • 2 packages shelf-stable gnocchi (16 oz each)
  • 2 pints cherry tomatoes
  • 1 red onion, cut into wedges
  • 8 oz fresh mozzarella pearls (or a ball, torn)
  • 4 garlic cloves, smashed
  • Fresh basil
  • 4 tbsp olive oil ✓ pantry
  • 1 tsp Italian seasoning ✓ pantry
  • ¼ tsp red pepper flakes ✓ pantry
  • Salt and black pepper ✓ pantry

Steps

  1. Preheat oven to 425°F.
  2. On a large sheet pan, toss gnocchi (straight from the package — do not boil), cherry tomatoes, red onion, and garlic with olive oil, Italian seasoning, red pepper flakes, salt and pepper. Single layer, two pans if crowded.
  3. Roast 20–25 min, stirring once halfway, until gnocchi are golden and crisp and the tomatoes have burst and gone jammy.
  4. Pull the pan. Toss everything gently so the burst tomatoes coat the gnocchi like a sauce.
  5. Scatter mozzarella over the hot pan — it softens on contact. Top with torn basil and serve straight from the pan.
Also soft-ish: If Amanda's mouth is still tender Wednesday, this eats very gently once the tomatoes and cheese are in play. Matt: Gnocchi is basically pasta pillows — cut in half, cool slightly, watch them vanish. Your plate: Heavy on the tomato-onion side of the pan.

  • ½ cup grated Parmesan (mix into breadcrumbs)

Steps

  1. Eggplant prep (do first): Salt the eggplant rounds on both sides, rest 20 min on paper towels, then pat very dry. This pulls out bitterness and moisture.
  2. Preheat oven to 425°F. Start pasta water.
  3. Set up the line: flour in one dish, beaten eggs in another, breadcrumbs + Parmesan in a third. Season the chicken cutlets.
  4. Bread everything: flour, egg, crumbs, pressing crumbs on firmly. Do the eggplant first, then the chicken — no raw-chicken contamination in the shared crumbs for Amelia's slices.
  5. Shallow-fry in ¼ inch of oil over medium-high: eggplant 2–3 min per side, then chicken 3–4 min per side, until golden. Drain on a rack or paper towels.
  6. Arrange everything on a sheet pan. Spoon marinara over each piece, top with mozzarella. Keep Amelia's eggplant grouped at one end.
  7. Bake 8–10 min until the cheese is molten and starting to brown. Meanwhile cook and drain the pasta, tossing it with the rest of the jar of marinara.
  8. Serve over pasta, basil on top.
The order rule: Eggplant through the breading station before chicken — same crumbs, no cross-contact. Matt: Buttered pasta + a little cut-up chicken or eggplant. Your plate: One cutlet (or go eggplant with Amelia — genuinely the move), big pasta restraint, maybe a side salad if there's anything green in the crisper.

  • 2 cans black beans, drained

  • 2 limes

Steps

  1. Warm black beans in a saucepan with cumin, garlic powder, paprika, and a splash of water. Smash roughly with a fork — chunky paste, not soup.
  2. Mash avocados with lime and salt for guac. Set out salsa and sour cream.
  3. Assembly: spread bean mash on half a tortilla, generous cheese, fold. Repeat.
  4. Griddle or skillet over medium with a little oil or butter: 2–3 min per side until golden, crisp, and molten inside. Work in batches, hold finished ones in a warm oven.
  5. Cut into wedges, pile on a board, let everyone hit the toppings bar.
Matt: A plain cheese quesadilla cut in small wedges — beans optional depending on his mood. Teens: They can griddle their own second round — it's a skill night. Buy note: The tortillas, cheese bag, salsa, and sour cream are deliberately oversized — Saturday's tacos use the remainder.

  • 1 lb ground beef
  • 1 can refried beans (Amelia)
  • Tortillas — remaining from Friday
  • Shredded cheese — remaining from Friday
  • Salsa & sour cream — remaining from Friday
  • 1 lime
  • Shredded lettuce or cabbage
  • 1 packet taco seasoning ✓ pantry
  • Hot sauce ✓ pantry

Steps

  1. Brown the beef over medium-high, ~8 min. Drain, add taco seasoning and a splash of water, simmer 2 min.
  2. Warm refried beans in a small pot with a splash of water to loosen, and a squeeze of lime.
  3. Warm tortillas in a dry skillet or directly over a gas flame for a few seconds a side.
  4. Set it all out — beef, beans, cheese, lettuce, salsa, sour cream, hot sauce. Everyone builds. That's dinner.
Amelia's tacos: Refried bean + cheese + all the toppings — a complete taco, not a concession. Scaling for teens: If James is extra hungry, a second can of refried beans stretches further than more beef and everyone can mix. Sunday: You're off. Order the thing you actually want.

The Fri→Sat carry-over — tortillas, cheese bag, salsa, sour cream — means Saturday only needs beef, refried beans, and lettuce. Arborio rice and gnocchi look like specialty buys but both are cheap and shelf-stable. Sunday costs whatever the takeout costs, and that's between you and the delivery app.
